Note: Prepare Earlier At Least 7 To 8 Hours

For Khaman: -

100 Gm Besan/ Bengal Gram Flour

½   tsp Turmeric

½ citric acid crystals, Nimbu phool

2 Sachets sugar-free or  1 tablespoon sugar

1 tsp Green chili ginger paste

1 tsp oil

1 sachet Eno or 1.5 tsp Fruit Salt/baking soda

Salt as per taste

For Tadka: -

1 tsp oil

2 tablespoon mustard seeds

3-4 tablespoon sesame seeds

Pinch of asafoetida

4-5 green chilies slit

3-4 Sachets Sugar-Free or 2 Tbsp sugar

Approximate 1 cup water or as required

1/4 cup coriander leaves and curry leaves


  • Step1. Take besan, add turmeric powder, salt, asafoetida, nimbu phool, sugar- free and make a batter with the required water. The consistency of the batter should be not so thick or not runny as well. The batter is ready. (Don’t add Eno or fruit salt now) .
  • Step2. Keep water to boil in a steamer. Grease mould or thali with oil. Now add Eno or Fruit salt with 1 teaspoon oil into the batter and mix well. ( This Can Help You To Make Khaman More Fluffy).  Immediately pour the batter into an oil-greased 8-inch pan or thali. Cover with lid and steam for 25-30 minutes. Let it cool down at room temperature.
  • Step3. In a pan add oil and heat it. Add mustard seeds. When crackles, add sesame seeds, curry leaves, and slit green chilies. Saute for a few seconds. Add water, and sugar/sugar-free. When water comes to a boil add on steamed Khaman.  At last, Add coriander leaves on top to serve.

Besan Is a Good Protein Source, If It Is Used For The Correct Recipe You Will Get Less Calories As Well. Enjoy Delicacy.
