Zero Fat Skimmed Milk Powder- 2 Scoop or Skimmed Milk- 200 ml
Curd – 1 cup
Lemon juice- 1 Tsp
Onion- 1 Medium- 50 Gms
Tomato- 1 Medium- 50 Gms
Cumin Seeds- 1 Tsp
Roasted Besan/Gram Flour- 1 tbsp
Garlic And Green Chilli Paste
Oil- 1 teaspoon- 5/10 Gms
Spices- Turmeric, Chilli Powder, Cumin- Coriander Powder, Bhurji Masala, Clove, Cinnamon, Whole Cumin
Step1. Dilute milk powder in 3 glass of water & make milk. Boil the milk. After one boil adds the curd gradually that. Stir while you are adding. After that add lemon juice to the milk and stir it till you see milk begins to curdle. You can see the clear whey at this stage. Remove the vessel from the stove otherwise, you may get hard paneer.
Step2. Strain the mixture and put the paneer in cheesecloth or any other cloth by wringing it. Press down the cloth & place a heavy object on it to paneer set. Keep in the fridge for 20 minutes. Your skimmed milk paneer is ready.
Step1. Take a pan, add oil in it. Add Cumin Aka Jeera in it, and wait till crackling. Add garlic- chilli paste, after it crackles add the onion. Cook it till it becomes golden brown, at that time add tomatoes. Cook it for a while and add all the spices. Then add roasted besan in it. The purpose of adding roasted besan is, you can get the creamy texture of bhurji.
Step2. After adding spices cook for a while and add grated paneer that we have made earlier. Lastly, add the paneer masala and coriander leaves. Serves Hot.
